Hand-picked grapes were whole-cluster pressed, with only the most delicate juice being used for the sparkling wine. Fermentation in three-year-old barrels, followed by a partial malolactic fermentation, added flavor and aroma complexity without distracting from the perfumed Chardonnay fruit.
